A hotel chef has proved her passion for pastry with an unusual culinary milestone.
Sarah Mason, pastry chef at the art-deco Midland Hotel in Morecambe, has overseen the production of over a quarter of a million scones since 2013.
“The sheer volume of scones, cakes and desserts we make to be served in the Sun Terrace restaurant is pretty staggering when you tot it all up,” explains Sarah.
“It was pointed out that we’d served over 125,000 afternoon tea covers in the past six years, each with two of our home-made scones, so we knew we’d baked over a quarter of a million scones.
“On a typical day we’ll have bookings for fifty afternoon teas, but it can be much more than that. We’ve reached 300 afternoon teas in one day, which underlines their popularity.
“The Midland is a happy and fulfilling place to work with an amazing history and clientele. Baking more than a quarter of a million scones must be testament to that!”
Sarah has worked in the kitchens of The Midland since 2009 and has managed the pastry section and afternoon teas for six years. All of the hotel’s afternoon teas are prepared fresh each day in house using the best local produce, with scones baked using a closely guarded recipe.
